I decided to prepare a meal timetable for my family comprising hubby, 2 year old and myself. I thought it was a brilliant idea and it should be relatively easy, afterall, I knew what I wanted – a well balanced meal timetable that was delicious and nutritious comprising of both African and non-African dishes.
But Alas, I started and I realised that it was actually a lot more difficult than I had anticipated. I wanted to create a menu timetable for breakfast, lunch and dinner for 14 days. Breakfast wasn’t so bad but having to think of different meals for lunch and dinner was another story. (I didn’t want rice to feature more than once a week – trying to cut down).
Apart from drawing a blank after day 3, I felt that the choices I have in Lagos are limited. I wanted variety at affordable prices and easy to prepare meals as I have no cook, only a househelp and I work 8am – 6pm, Monday to Friday.
So I ask myself, what do people eat at home? I would love ideas. Is anyone willing to share their meal timetable?
Below is as far as I was able to get and I’m still not 100% convinced. I intended to get to at least Day 14.

| 1 | Rice and Stew | Chicken and chips |
| 2 | Noodles with mixed vegetables and sausage | Amala + Ewedu/Ila |
| 3 | Fried plantain + stew | sweet potato and sauce |
| 4 | Pasta and sauce | Pounded yam + stew/Green salad with fish or chicken |
| 5 | Sandwich (with sardines/ham/makarel and boiled egg) | CousCous and sauce |
| 6 | Asaro/Rice and stew |

i have a family that dont eat a lot of things we eat mostly rice and eba am tired help me.

We still have mashed potatoes and sausages, plantain asaro, lasagna, boiled plantain/ grilled plantain, wheat flour, moin moin, akara, beans, ogi etc
It’s difficult to make rice only once a week so what I do is combine with vegetables to reduce the amount of rice eaten. So when I cook rice, I add cabbage and carrots. Also can have beans and rice cooked together.
To make the meal healthier, use of ofada rice/ brown rice and also brown pasta and brown bread.
Note: difficult to eat before 6.30pm so remove the carbs in the meal for hubby and self.
