For a delicious meal, this week LagosMums brings to you Simply Fish Curries!
Curries are a suitable alternative to stews and perfect with just about everything you can have with stew.
This simple recipe can be adapted for beef, chicken, prawns or other child favourites.
Ingredients
1 whole white fish fillet (preferably cleaned red brim)
½ tin of 400g tomatoes -blended
½ a scotch bonnet (optional) -blended
1 red bell pepper
1 orange bell pepper
1 shallot or ½ of a small onion -finely chopped
165ml coconut milk (essential, however, you only need a little. Store the rest in a container and freeze for a short time before next use)
Olive oil
Herbs, Spices and Seasonings:
¼ tsp. ground garlic powder (or small clove of garlic grated)
Small cut ginger (grated) or ¼ tsp. ground ginger
½ tsp. ground parsley ϐ 1tsp. ground coriander ϐ 2 sprigs of fresh thyme ϐ ½ tsp. curry powder
½ tsp ground cinnamon
1 tsp. black pepper or white pepper
¼ fresh lemon
Salt to taste
Fish stock cube or fish seasoning
Few fennel seeds. This is a perfect seasoning for fish dishes including fish stews, fish casseroles.
Method
Cut fresh fish into small slices and season with grated ginger, cinnamon, fennel seeds, dash of salt, coriander (ground or fresh), dash of fish
In a pan, add 2tsp olive oil and heat up. Pan fry the fish until slightly golden Remove from heat and allow to rest.
In another pan, heat up add 2tsp olive oil, then sauté the onions and
Then add the chopped sweet bell peppers, and dash of fish seasoning. Simmer for at least 3
Add the blended tomatoes and scotch bonnet and allow to simmer for at least 10 minutes stirring
Add curry powder and add coconut milk, parsley, thyme and drizzle a little fresh lemon Allow to simmer for another 5 minutes.
Add the pan fried fish and Taste for seasoning, add dash of black (or white) pepper and allow to simmer for a few minutes.Oh so yummilicious!
