Recipe: Spicy Garlic Chicken Casserole

Spicy Garlic Chicken Casserole is a  delicious mini meal that can be garnished anyway you want. You can add veggies, mushrooms or substitute ginger and garlic for rosemary and lemon, basically whatever your taste preference is. It can be served with sliced grilled unripe plantains  or you could serve yours with just anything.

  • 1 whole chicken breast cut into 2 half 
  • 1 medium size Green peppers
  • 2/3 large size Yellow bell peppers
  • ½ medium size Onion
  • 2 Pepper (ata rodo)
  • as desired (minced) Garlic and ginger
  • 1tsp Salt
  • 2 cubes Knorr
  • Black pepper as desired
  • 2tsp Light soy sauce
  • 1 tbsp Vegetable oil

MethodWash and prep all your ingredients
  1. Chop your peppers and spices and mix them all in one bowl .
  2. Pour in your oil, soy sauce, salt, seasoning cubes and mix it all in
  3. Pat dry your chicken breast to remove excess water and season with a pinch of salt and black pepper
  4. Par grill the chicken on a hot grill or a Panini maker to trap the moisture in the chicken and char it lightly 
  5. When done, set in your dish, pour your vegetable mix on the top and cover with a foil sheet
  6. Bake in a preheated oven  at 175 degrees for exactly 25mins
  7. Pull out of the oven once time is up and let it sit on your counter till for 5 mins (the meat needs to rest after all that work don’t you think ☺).

And voila! enjoy it fresh and healthy.
