
Mums do you know that nothing can be exciting as knowing that you can make something special out of your everyday ingredients? Who else is ditching the easy-to-fix dodo (fried ripe plantain) and egg for this wonderful meal? You can make this balance diet with yam or potatoes.
Ingredients
3 pcs plantain
2 cups groundnut
2 pcs pepper
2 pcs tomato
12 pcs shrimps
1 tbsp tomato paste
1 pcs onion
1 scoop tomatoes puree
1 scoop vegetable oil
1 tbsp crayfish
1 pc seasoning cubes
1 tsp salt
Method
- Firstly, chop the onion, tomatoes and pepper. Also, grind the groundnut to fill 1 cup.
- Bring 2 cup of water to boil in a medium pot and add the onions, chopped tomato, tomato puree, pepper, crayfish, seasoning cube ans salt.
- Wash and peel the plantain (preferably half ripe plantain) then cut into desired size. Add the plantain and shrimps into the pot and cook for about 10-15 minutes or until the plantain is soft. This depends on the size of the plantain chunk.
- Dissolve the groundnut in little water and add it into the pot. Add the oil and stir. Adjust the seasoning if necessary then lower the heat and simmer for about 5 minutes. Add water if necessary to improve consistency. If you are using aubergine, chop and add at this stage.
- Serve warm.
