Easter is here again, and we all know that it is not complete without a delicious sumptuous looking meals. That said, we have combined two of our favourites to make this 2017 Easter a real treat. Pay attention mums. Lets go.

Double Easter Recipe- How To Make Honey Soy Bacon Wrapped Chicken And Corned Beef Stew

For Your Honey Soy Bacon Wrapped Chicken You Will Need

12 pcs streaky bacon

2 pcs chicken breast

1 teaspoon garlic powder

1 teaspoon ginger powder

1 tbsp chilli powder

1 teaspoon black pepper

1 teaspoon sesame oil

2 tbsp soy sauce

Method

  • Pre-heat your oven to 370 F
  • Cut the chicken breast into about 12 strips. Set aside
  • In a bowl mix honey, chicken seasoning powder, garlic, soy sauce, ginger, chilli powder and sesame oil.
  • Pour the marinade over the chicken and allow to marinate for about 40 mins.
  • Wrap each chicken strip with one bacon and brush with the marinade. Place in a foil lined baking sheet.
  • Sprinkle some black pepper over and bake for about 15 mins.
  • Flip over and brush with a bit more marinade, allow to bake for another 10 mins or until chicken is done and the bacon a rich golden brown.

Now To The Corn Beef Sauce

This delicious sauce can be enjoyed with a range of foods including yam, bread, pasta and rice. The cooking process is quite similar to that of bolognese sauce but corned beef sauce is the popular alternative that Nigerians are familiar with.

Ingredients

1 can corned beef

4 pcs big tomatoes

2 pcs tatase

4 pcs rodo

2 pcs bouillon cube

1 pc onion

1 teaspoon curry powder

1 teaspoon thyme

1 teaspoon parsley flakes

4 tbsp vegetable oil

1 teaspoon garlic powder

2 tbsp tomato paste

Method

  • Blend the tomatoes, tatashe, rodo and 1/2 onion with as little water as possible. Set aside.
  • Pour oil into a saucepan and put on medium heat. Chop the remaining 1/2 onion into the
  • oil. Allow to fry for about 4 mins.
  • Add in the blended pepper and allow to fry for about 10 mins.
  • Add in the tomato puree and season with stock cube, thyme, garlic powder, curry and
  • parsley. Allow to simmer for about 5 mins.
  • Turn up the heat, add the corned beef and stir until well combined with stew (do not over
  • mix). Cook for another 5 mins.
  • Serve with yam or bread. Donot forget to add your just made Honey Soy Bacon Wrapped chicken.
