Another great white meat recipe, multi-purpose stir-fry the children can have with rice, plantains, spaghetti, pasta etc It’s about keeping all the nutrients locked in! Food Fantasies…….of a yummy mummy
Ingredients
For this simple recipe (family of 4), you need….
A pack of turkey breasts (you can also use chicken, white fish or beef)
1 medium sized red onion (finely chopped)
1 tin coconut milk
Veggies medley (a combination of broccoli, carrots & peas)
3 small mixed sweet pepper (red and green, chopped)
1 tin of tomatoes (blended)
Fresh lemon
1 tbsp. olive oil
Herbs, Spices and Seasoning: 1 clove garlic, small ginger (crushed), 1 tsp. oregano, 1 tsp. curry powder-mild or medium, 1 tsp parsley, 1 bayleaf, 1 tsp ground coriander, ½ tsp. basil (or some fresh efirin), black pepper (dash), turmeric (dash), little knorr chicken cube, and salt to taste.
TIP: Depending on the size of your family, you may need to adjust the quantities.
Method
Heat a 1 tbsp olive oil and place the sliced turkey breast. Add onions, garlic, ginger, curry powder, parsley, coriander, basil and salt.
Stir the sizzling continuously for at least 5 minutes so that turkey breast is cooking nicely as the herby flavours are being locked in.
Add the coconut milk, stir and add 1 bay leaf. Simmer for 5-6 minutes. Add veggies medley, sliced peppers and some of the blended tomatoes. Then add a little knorr seasoning and allow to simmer until tomatoes thicken a little.
Add a little hot water to lighten the consistency if needed. Taste and seasoning more if needed without overpowering the stir fry. Its ready… taste those beautiful flavours and the aroma of that stir fry!
