Our recipe this week is the Watermelon, Feta & Mint Salad! Aside the major ingredients, you shouldn’t have this salad without your tangy lemon zest flavor which goes a long way to give the watermelon an aromatic flavor. Crumbling the cheese rather than tossing it, gives it an interestingly new texture.
1 pc watermelon
1 pc lemon
110 g feta cheese
1 pinch salt
1 pinch ground black pepper
3 tbsp olive oil
10 g mint leaves
- Firstly peel and chop the watermelon and mint leaves, then set aside. Squeeze lemon juice into a cup and cut out strips of lemon zest using a sharp vegetable peeler, chop the zest and set aside.
- Place the watermelon chunks in a bowl, add the lemon juice and half of the lemon zest. Add 3 tablespoons of olive oil and the mint leaves then toss until the watermelon is dressed. Season with salt and black pepper as desired.
- Transfer the salad to a large shallow plate, sprinkle with the remaining lemon zest, crumble the top with cheese and drizzle with olive oil and black pepper as desired.
- Serve immediately.
