Recipe- Watermelon, Feta & Mint Salad

Our recipe this week is the Watermelon, Feta and Mint Salad! This is a wonderful side to enjoy with the family this weekend. Aside the major ingredients, you shouldn’t have this salad without your tangy lemon zest flavor which goes a long way to give the watermelon an aromatic flavor. Crumbling the cheese rather than tossing it, gives it an interestingly new texture. Enjoy this healthy recipe with your family this weekend!

Ingredients

  • 1 pc watermelon
  • 1 pc lemon
  • 110 g feta cheese
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 3 tbsp olive oil
  • 10 g mint leaves

Method

  • Firstly peel and chop the watermelon and mint leaves, then set aside. Squeeze lemon juice into a cup and cut out strips of lemon zest using a sharp vegetable peeler, chop the zest and set aside.
  • Place the watermelon chunks in a bowl, add the lemon juice and half of the lemon zest. Add 3 tablespoons of olive oil and the mint leaves then toss until the watermelon is dressed. Season with salt and black pepper as desired.
  • Transfer the salad to a large shallow plate, sprinkle with the remaining lemon zest, crumble the top with cheese and drizzle with olive oil and black pepper as desired.
  • Serve immediately.
