Hi Mums! Our recipe of the week is Jollof rice Sushi. It is an interesting switch from the Japanese Sushi – the blend of Nigerian flavors with Japanese cooking techniques is absolutely brilliant.

Jollof rice sushi

Ingredients

  • 1 cup of diced tomatoes
  • ½ cup of tomato paste
  • 1 cup of diced onion
  • ½ cup of bell pepper
  • 1 tbsp of thyme
  • 2 tbsp of curry
  • 1 tsp of garlic
  • 2 tsp of stock powder
  • 2½ cup of water
  • Oil (2 tbsp)
  • 2 pcs of bay leaf
  • 2 cups of sushi rice
  • Salt to taste
  • Soy sauce
  • Ginger
  • Wasabi
Sushi roll ingredients
  • Dry seaweed
  • Avocado
  • Cucumber
  • Tomatoes
  • Sushi rolling mat

[How to make native Jollof rice]

Preparation

1). Put diced tomatoes, tomato paste, diced onion, bell pepper, thyme, curry, garlic and stock powder in a blender. Add ½ cup of water and blend till it’s smooth.

2). Pour oil into a pot and add the contents of the blender. Put in some bay leaf.

3). Cook at low heat for 10 minutes.

4). Add sushi rice, stir well. Add 2 cups of water, stir. Cover the pot and cook for 30 minutes at low heat.

5). Lay seaweed on sushi rolling mat. Put few spoons of Jollof rice and press down lightly into seaweed then spread evenly.

6). Cover the Jollof rice with seaweed. Flip over seaweed on rolling mat with the rice facing the mat. Align sliced tomato, avocado and cucumber at about 1 inch away from the edge of the seaweed. Roll from the bottom, using a sushi roller mat to aid the process.

7). Cut up rolled sushi
